But every Friday it’s the same. I wake up, make protein pancakes for one, and spend my morning doing whatever my little heart desires.
This last Friday was no exception. I felt like my modest stack of pancakes gave me the last little push I needed to get through a hard workout and a weekend of yoga workshops. My teacher, Rocky, was in town!
I went to a 2 hour class with him Saturday and Sunday morning. I always have some sort of break through when Rocky is leading me through a practice. I don’t know how he does it – he’s made of unicorns and fairy dust, that’s the only explanation.
It was so great to be back with my teacher training friends and go through a Rocky practice savasana. Seriously, a Rocky Heron savasana is the best savasana. He plays the guitar and sings to you while you completely bliss out. You can check out his new EP here!
Alright, enough yoga. Let’s talk pancakes.
Every Friday someone asks for my recipe. I’ve shared a protein pancake recipe before, but my recipe has evolved a little bit and become much easier. Here’s my new go-to concoction:
Protein Pancakes for One:
- 1 serving vanilla protein powder
- ¼ cup Bob’s Red Mill Gluten Free Oats
- ¼ cup egg whites
- ½ cup almond milk
- ½ tsp cinnamon
Add all ingredients to a blender, and blend until you have a smooth, pourable batter.
Cook on a low/medium setting. You don’t want your pan quite as hot as you would have it to cook a normal pancake. Low and slow is the trick!
To make Chocolate Protein Pancakes, I use the same recipe but with chocolate protein powder and leave out the cinnamon. Add chocolate chips, blueberries, bananas, pecans, the possibilities are endless!
