Land of Enchantment

I’m back from a long weekend of soaking, hiking, exploring, and eating REALLY good Mexican food.Welcome to New Mexico

Remember that elk hunt The Carnivore went on last October? Well, we got a call a few weeks ago that his mount was ready to be picked up. He’s been schmoozing me for weeks to let him hang that thing in our living room, and this weekend was no exception!

We spent a few days exploring northen New Mexico before picking up his new friend, and it was just as magical as I had hoped. Since I’m scrambling to write this on my lunch break, I leave you with pictures…

We spent our first night at Ojo Caliente.

And ate really, really well.

Next stop – Santa Fe.

My favorite New MexicanI’d been dying to explore Santa Fe ever since I married this man. It was worth the wait.

I treated Santa Fe basically as a food tour. I had more places I wanted to eat than we had time for, so we scheduled around our stomachs. I’ll just tell you about my favorite meal… Huevos Rancheros from Cafe Pasqual’s. OMG. Eat there. And get the combo sauces.

Shopped at the Palace of the Governors…

When I couldn't fit anything else in my stomach, we turned to liquids - drinking chocolate.

After spending a few days in Rio Rancho with family, it was finally time to pick up the animal. Did I mention Chase and his cousin Heath both got elk?!elkMy husband is so proud he can hardly stand it. Check out that grin.

The 9 hour drive home was an interesting one. We stopped in Amarillo to look at the Cadillacs.

HandstandsAnd made sure this thing was tied down really well.

ElkYou wouldn’t believe how many honks, waves, and thumbs up were sent my husband’s way. People even asked to take a picture with it; The Carnivore was more than happy to oblige.

For completely separate reasons, we both had a FABULOUS weekend.

I will do another post soon of where we stayed, ate, and things to do.

    Let that boy hang up his trophy!! I loved this blog post!!! I want to go to Sante Fe so bad!! Now I will have some ideas:)

      Haha! You’re his new favorite person, Cassie. I’ll be sure to do a post on every place we stayed and ate, so then you’ll have to go! You will love it!
