Well friends, this will be my last post for a little while. I’ve mentioned that The Carnivore and I have some upcoming travel plans, but tomorrow we are headed to ITALY! Usually the hubs doesn’t let me post such plans, but we’ve got someone really big and scary staying at our house. So don’t even think about it…
In preparation for our trip we’ve both been working extra hard. Chase has been logging extra hours to get ahead, and I’ve been teaching LOTS of classes. I say it’s to help the teachers who are subbing for me while we are gone, but truthfully, it’s just more money for our gelato fund. 😉
And naturally, I’ve gotten sick. Isn’t that how it always works? Work like crazy to get ready for vacation and then come down with something right before you leave? I do this every time. The worst was when I got bronchitis right before our wedding. If you close your eyes while watching our wedding video, you’d be convinced Chase was marrying a man. I’ve been to the doctor twice within the last 5 days. Thankfully, my strep and mono tests came back negative, but I’ve got some sort of virus. My lymph nodes are the size of beach balls. I’ve been resting as much as possible, living off of soup and smoothies, haven’t worked out in 4 days, and I finally feel somewhat normal again.
Here’s the smoothie combination I’ve been living off of: Cherry, Vanilla, Almond Green Smoothie.
- 1 LARGE handful of spinach
- 1 serving vanilla protein powder
- 1/4 tsp almond extract
- 1 cup frozen cherries
- Optional: raw almonds or chia seeds
Add spinach, protein powder and almond extract to a blender. Blend until smooth. Add frozen cherries and blend again. Optional – add a small handful of raw almonds or a Tbsp of chia seeds and blend one more time. I love the texture of raw almonds in my smoothies.
Sometimes I eat it in a bowl with lots of toppings. Fruit soup is what we call it.
Our last weekend at home was a busy one: laundry, cleaning, packing, mowing, “The Fight” (Jimmy Kimmel totally stole the show for me), and The Carnivore’s basketball league tournament.
They won! 13-0, Night League Champions. GOOD thing. I don’t even wanna think about what our 15 hour travel day would’ve been like if they’d lost… Yikes!
1 work day, 1 class, and 1 sleep stand between me and an Italian vacay. I won’t be updating the blog, but I’ll be posting to Instagram and Facebook regularly. Until next time…
