I can always tell what day it is by how my body feels. I don’t have to check my phone, I just roll over and if it hurts – it’s Wednesday. It’s definitely Wednesday. I’m looking forward to a day of cooler temps, lots of easy movement, and peach oatmeal. Yes, we are still eating our way through peaches and we are loving every minute of it! They just don’t get old.
I’ve lost count as to how many I’ve eaten, but for the first week I was averaging 3 a day. I’m not ashamed. We’ve eaten them in peach cobbler, with yogurt, as a pancake topping, on top of ice-cream, and just straight out of the bowl.
After working our way through several sweet variations, I decided we needed a little more spice in our life. Enter The Pioneer Woman’s peach salsa.
We made a big bowl of that sweet and spicy goodness, and the longer it sat, the better it got.
The sweetness from the peaches cuts through the onion and jalapeño, and the chili powder and lime juice give it the perfect kick. I made breakfast out of chips and this peach salsa. Here’s how I justified it: peaches are fruit, fruit is perfect for breakfast. The chips were just a utensil, so it’s ok.
It’s delicious as is, but it’s really delicious on chicken!
And by the “we” in this post, I actually mean “I.” Let’s not pretend that The Carnivore ate any of this. I polished off that entire bowl all by myself.
