I have an addiction to Coolgreens. I justify it by thinking that of all the addictions one could have, an addiction to a salad place is not so bad. Not so bad for my health, but REALLY bad for my wallet. My favorite salad costs $13-$14. I don’t eat it everyday, but even if I eat it two-three times a week I feel a little guilty.
My favorite salad is the Plaza Skinny – mixed greens, avocado, bean sprouts, sun dried tomatoes, artichoke hearts, sunflower seeds, basil vinaigrette, and I add salmon. I’m craving one just writing about it. When packing my lunch recently, I saw a sad piece of leftover salmon (recipe here) that either needed to be eaten or tossed. I decided to try my hand at my favorite Coolgreens concoction.
I laid out everything I needed on the counter. Knowing that the basil vinaigrette would be the hardest thing to replicate, I started there. I pulled out basil, lemon, olive oil, then I saw the avocados. I remembered an avocado dill dressing from one of my favorite nutritionists, Kimberly Snyder. It’s in her book, The Beauty Detox Solution. I use that dressing on salads quite often, so I figured substituting basil for dill would give me a creamy basil dressing that would work perfect on my copycat Coolgreens salad.
Dreamy Creamy Avocado Dressing (from Kimberly Snyder)
- 1 avocado
- 1 garlic clove
- 1/4 cup water
- 2 Tbsp. fresh basil
- 3 drops liquid stevia
- 1/2 tsp. sea salt
- 2 Tbsp. lemon juice
Add everything to a blender and blend until smooth. Easy! I use Kimberly’s avocado dressing as a veggie dip, sandwich spread, and of course, a salad dressing.
In a bowl layer mixed greens, sun-dried tomatoes, artichoke hearts, bean sprouts, sunflower seeds, and salmon. Top with the avocado basil dressing, and voila! Coolgreens at home.
