With the exception of a few sore muscles, my marathon teaching week was pretty awesome! I really thought I was going to spend the week with a Starbucks Venti Misto permanently attached to my hand, but I didn’t need it. It’s amazing the jolt of energy I get from teaching a class. I can go into a class feeling tired or upset, but as soon as I start teaching it all melts away. I really think I get more from teaching a class than taking a class sometimes.
Don’t get me wrong, I still had a Starbucks when I taught 3 classes back to back to back. Whew!
The fact that I already had food prepared helped too! I never made my way through a drive-thru between classes or stressed about what to make for dinner. It was so nice having things ready to go in the fridge. In case you didn’t see, here’s what I prepared the Sunday before my crazy, crazy week.
So some days, I just mixed and matched the chicken and veggies.
Chicken with asparagus, brussels, and mashed cauliflower…
Some mornings I paired the veggies with a couple of over easy eggs for a quick breakfast…
Chicken Taco Salad – bed of greens, red bell pepper, seasoned black beans and rice, grilled chicken, avocado, topped with salsa. I already had the chicken and brown rice prepped, so I opened a can of black beans, seasoned the rice and beans with chili powder, cumin, paprika, garlic, and salt and called it lunch.
By mid-week, The Carnivore wanted a Flat Out pizza, so he browned ground elk meat while I was teaching. When I got home I was dying for some Italian, so I satisfied my craving with food I already had on hand.
One of my favorite things is to eat my favorite marinara or meat sauce over veggies. I realized a while ago that when I’m craving Italian, most of the time it’s the flavors I want, not the big bowl of pasta. So I paired ground elk with marinara, and ate it over a big bowl of of my prepped veggies and brown rice.
With just a little mixing and matching, I never felt the ‘Chicken and Veggies, again?!‘ blues. My meals were simple, but different. I’ve done almost the same prep this week, so I’ll let you know if I come up with anything different. 😉 Have a Happy Tuesday!
